From the Bay to Your PlateWhere does our seafood come from?

Celebrating the waters around Jersey and the people who bring the catch to our kitchens
For an island surrounded by water, seafood has always been a big part of life in Jersey.
It’s also a big part of what we serve at JP Restaurants. From freshly shucked oysters at Oyster Box to crab, lobster, scallops and fish at Jersey Crab Shack, seafood is at the heart of many of our menus.
We’re proud to source locally wherever we can, and we believe knowing where our ingredients come from is an important part of serving good food.
Jersey oysters
Our Jersey Rock oysters are grown naturally on the seabed of the Bay of Grouville, where they develop in the unique conditions around our Island. They’re harvested daily from the seabed, sorted, and brought to our kitchens fresh, making their journey from the Jersey coastline to your plate a particularly short one. In fact, they’re so fresh, we occasionally find little marine organisms when we shuck them, a little reminder of the natural habitat where they grow!
At Oyster Box or Jersey Crab Shack, you can enjoy them as nature intended: freshly shucked, beautifully simple, and with a view across St Brelade’s Bay.
Local crab, lobster and scallops
Some of the most prized ingredients on our menus are also among the most local. Crab, lobster, oysters and scallops are sourced from Jersey waters whenever available, allowing us to showcase some of the incredible seafood on our doorstep.
Availability naturally depends on season, weather, and what’s being landed, so our menus can change throughout the year. That’s part of the joy of working with fresh, local produce.
And when it can't be local?
Not every type of fish or seafood we serve can be caught around Jersey, and we don’t believe in pretending otherwise.
When an ingredient isn’t available locally, we look for suppliers who share our approach to responsible sourcing, considering factors such as sustainability, quality and welfare alongside provenance.
For us, sustainable sourcing isn't simply about choosing something because it travelled the shortest distance. It’s about understanding the whole journey, from how seafood is caught or farmed, through to how it reaches our kitchens.
Good seafood starts with knowing its story
We’re lucky to live on an island with such a rich connection to the sea. By choosing local seafood where we can and working with responsible suppliers when we can’t, we can celebrate that connection while making considered choices about what goes onto our menus.
So next time you order seafood at JP Restaurants, take a moment to ask where it came from. From the bay to your plate, there’s a story behind every catch.
